Taco Lasagna
|
|
1 jar (16oz.) mild taco sauce
1 jar (16oz.) mild salsa
1 cup cooked, chopped Spanish chorizo sausage
1 can (11oz.) Mexican corn, drained
1 egg
1 container (15oz.) ricotta cheese
2 tbsp chopped, fresh cilantro
1/2 tsp ground cumin
1/4 tsp salt
2 cups shredded marble cheese
1 pkg (8oz) oven-ready lasagna noodles
Preheat oven to 350 degrees F. Combine taco sauce, salsa and 2/3
cup water. Mix 3/4 cup of sauce with chorizo and set aside.
Mix together 3/4 cup sauce with corn and set aside.
In medium bowl beat egg. Add ricotta, cilantro, cumin, salt and
1/2 cups of shredded cheese. Spread remainder of sauce over the
bottom of 13" X 9" baking dish.
Set 4 noodles on sauce, spread with half of ricotta mixture,
chorizo sauce mixture and 1/2 cups shredded cheese. Repeat with
4 noodles, remainder of ricotta mixture, corn sauce mixture and
1/2 cup shredded cheese.Top with 4
noodles and sauce; cover with foil. Bake for approx. 1 hour.
Noodles will be cooked and lasagna hot and bubbly. Uncover; top
with remaining cheese and bake until cheese is melted, approx 15
min. Let stand for 10 minutes; serve.

Cheesy Lasagna

1 lb. lean ground beef
1 large onion
1 clove garlic, minced
1 tsp. parsley flakes
1 large can tomatoes
1 small can tomato soup
1 small can sliced mushrooms
2 bay leaves
1 tsp salt
1/4 tsp pepper
pinch oregano
Cheese Sauce:
4 tbsp marg
4 tbsp flour
2 cups milk
1 tsp salt
1/2 cup grated cheddar cheese
Chop onion and fry gently in small amount of oil. Add garlic and
parsley. Add tomatoes, soup, drained mushrooms, bay leaves, salt
and pepper. Stir well. Add ground beef, chopping it up. Cover
and cook gently for 1 hour, stirring and chopping ground beef
into small pieces. Cook lasagna noodles according to directions,
approx 12 - 16 noodles.
Cheese Sauce: Melt margarine and stir in flour until
smooth. Slowly pour in the milk. Cook over medium heat until
thickened, stirring constantly. Add cheese and salt, cooking
until cheese melts. Grease 9" X 13" pan and spread noodles over
bottom. Pour half of the tomato sauce over noodles. Layer
another set of noodles on top, add remaining tomato sauce. Cover
with cheese sauce. Bake in 325 degrees F oven for 25 min; broil
5 minutes or until browned. Let stand for 10 minutes before
serving.
