Here
are some different, easy to make, recipes for fried chicken.
Yummy Fried Chicken
4 Lbs. frying chicken
3/4 cup flour
2 tsp. salt
1/2 tsp. pepper
1/3 cup butter
1/3 cup whipping cream
1/3 cup green onion, chopped
Wash and dry chicken pieces. Put flour, salt and pepper into a paper
bag. Shake each chicken piece in flour mixture and coat evenly. Melt
butter in a saucepan. Add the chicken to saucepan, skin side down. Brown
chicken well. Add onion and fry for a couple of minutes more. Add the
whipping cream to pan. Turn heat down and simmer for about 1 hour.
Aunt Bessie's Fried Chicken
3 lbs. (approx.) chicken pieces, rinsed and dried with paper towels
1 egg
1 cup milk
2 cups Flour (approx.)
2-3 Tblsp. pepper
1 cup lard
1 cup solid vegetable shortening
1 Tblsp. salt
Beat egg and milk together in a shallow bowl. Put the flour and pepper
into a paper or plastic bag and mix together.
Combine the lard and shortening in a large skillet and melt over low
heat. The melted fat should be about 1 inch deep. Adjust if necessary.
Dip each piece of chicken in the egg mixture, then put chicken in the
flour mixture to coat. Shake well.
Raise the heat on the skillet; when hot place the chicken pieces in the
hot fat. Leave room around each piece of chicken. Fry chicken over
medium to low heat for about 6 or 7 minutes on each side, or until
brown. Then partially cover the pan and cook for about 15 more minutes,
turning the chicken frequently.
Remove the chicken when done, and drain the fat on a stack of paper
towels.
