This is an easy to make Cranberry Lemon Cookie. It has
become my favorite cookie recipe. Most of the ingredients are
basic. The cranberries can be purchased at any Wal-Mart. The
lemon peel is a little more difficult to find. I use lemon peel
granules and I was only able to find them in a specialty store.
The lemon peel isn't necessary in the recipe but I thought it added a
nice flavor touch. Citrus peel can also be used which can be
purchased in any grocery store. I hope you like this recipe. It is now
one of my favorite cookie recipes!

Cranberry Lemon Cookies
1 cup of
flour
1/4 teaspoon of salt
1/8 cup of sugar
1 tablespoon baking powder
1/2 tsp baking soda
1/4 cup of vegetable oil
1/2 tsp vanilla
1 teaspoon of lemon peel granules or citrus peel
1/3 cup of dried cranberries
1 1/2 to 2 tablespoons of water |
Directions:
Mix all the dry ingredients together. Add the liquid ingredients.
The mixture should be quite dry and almost crumbling. Press
the dough into small balls. Press the balls down. It
should make about 8 cookies.
Bake at 375 degrees for 14 to 16 minutes.

This is an original recipe that I made with my mother when she came
out to visit. My mother has a great touch with cooking from scratch.
This recipe is very easy to make. I keep baggies made up of the dry
ingredients on hand and then can quickly make a batch at any time.
This is a great snack with milk or a hot drink. It has quite a
bit of natural sweetness from the cranberries and lemon peel so the
quantity of sugar is small.
