Caesar Salads Are Delicious as

Gourmet Caesar Salad with Garlic
Croutons
|
|
3 cups French bread cubes, sliced into 1" cubes
2/3 cup Caesar vinaigrette, separate in half
2 tbsp. grated Parmesan cheese
1 tbsp. Dijon mustard
1/2 tsp. grated lemon rind
2 tsp. lemon juice
6 cups torn Romaine lettuce
1 1/2 cups halved cherry tomatoes
2 tbsp. bacon bits, optional
2 tbsp. Parmesan cheese, optional
Garlic Croutons:
Preheat oven to 350 degrees F and spray baking pan with
non-stick cooking spray. Together in a large bowl, toss the
bread, 1/3 cup vinaigrette dressing and Parmesan cheese until
coated. Spread on the pan and bake until golden, approx. 8
minutes. Let cool.
Salad:
In a large bowl, add the lettuce, tomatoes and croutons. In a
measuring cup, mix 1/3 cup vinaigrette, mustard, lemon rind and
lemon juice. Pour over the lettuce mixture and toss to coat. Add
the bacon bits and parmesan as a garnish if desired.

Romaine Caesar Salad

2 hard boiled eggs
1/4 cup lemon juice
2 tbsp. balsamic or red wine vinegar
1 tbsp. Dijon mustard
1 tsp. diced garlic
1 tsp. Worcestershire sauce
1 tsp. pepper
3/4 tsp. salt
1/2 cup olive oil
1 bunch Romaine lettuce, torn into bite-sized pieces
3/4 cup shredded Parmesan cheese
1 cup croutons
Remove the yolks from the eggs and in a blender, combine the egg
yolks, lemon juice vinegar, mustard, garlic, Worcestershire
sauce, salt and pepper. While blending, gradually add the olive
oil. Cover and cool in the refrigerator for 1 hour. In a large
salad bowl, add lettuce, parmesan cheese and croutons. Pour on
the dressing and toss to coat.

Caesar Salad with Creamy Garlic Dressing
|
|
6-8 cups Romaine
Lettuce
6 slices of bacon, cooked and crumbled
2 cups shredded marble cheese
Mix ingredients together in a large bowl and set aside.
Dressing:
1/3 cup cottage cheese
1 tsp. crushed garlic
3 tbsp. lemon juice
2 tbsp. olive oil
2 tbsp. water
2 tbsp mayonnaise
2 tbsp. grated parmesan
Blend dressing ingredients together in a food processor until
smooth and creamy.
