Tomato Vegetable Soup

Easy to make tomato vegetable soup, so flavourful! Round out your meal with homemade biscuits or bread.

Tomato Vegetable Soup

  1/2 cup each - carrots, celery, green peppers; diced
1 large onion, diced
1 tbsp. oil
salt and pepper
1 tsp. basil
1/2 can tomato paste
3 cups water
1 (19oz.) can tomatoes
1/2 cup macaroni
1 cup kidney beans
2 cups cabbage, thinly sliced
2 tbsp. parsley

Saute carrots, celery, peppers, onion in oil for 10 minutes. Add salt and pepper, basil, tomato paste, water, canned tomatoes and macaroni. Cook for 1/2 hour. Add kidney beans, cabbage and parsley. Cook until cabbage is done; serve.

 

 

Old Fashioned Tomato Vegetable Soup

  1 (28oz.) can diced tomatoes
1 (28oz.) can crushed tomatoes
1 tbsp. olive oil
2 celery stalks, chopped
1 med. onion, chopped
4 cups water
1 tsp. basil
1 tsp. salt
1/2 tsp. pepper
1 tbsp. parsley flakes

In a large pan, saute celery and onion in olive oil until soft. Add remainder of ingredients and bring to a boil. Lower heat and simmer for 30 minutes.
