Pumpkin Spice Cookies

These pumpkin spice cookies are so delicious. This recipe makes about 4 dozen cookies, so you may need to double the batch!

Pumpkin Spice Cookie Recipe

  1/2 cup shortening
1 cup sugar
2 eggs, lightly beaten
1 cup pumpkin (canned or fresh)
2 cups flour, sifted
2 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 cup raisins
1 cup chopped nuts

Preheat oven to 350 degrees F. In a large bowl, cream shortening and sugar. Add eggs and pumpkin and mix well. Sift flour, baking powder, salt and spices together. Add to pumpkin mixture and blend well. Add raisins and nuts. Drop by heaping teaspoon onto greased cookie sheet. Bake for approx. 15 minutes, until firm. Cool.

Lemon Icing:

2 cups icing sugar
1 tbsp. lemon juice
1 tbsp. grated lemon rind
cream

Combine first three ingredients together in a medium bowl and add just enough cream to make icing spreadable. Spread over cooled cookies.

 

 

Quick Pumpkin Spice Cookies

  1/2 cup shortening
1cup sugar
1 egg, beaten
1 1/2 cup sifted flour
1/2 tsp. baking soda
1 tbsp. pumpkin pie spice

Cream shortening and sugar together until fluffy. Add egg. Sift flour and baking soda together; add spices. Roll into balls and flatten with a flipper dipped in sugar. Bake approx. 10 min at 375 degrees F.
