Meatloaf with Oatmeal

  1 1/2 lbs. lean ground beef
1 cup tomato juice
3/4 cup uncooked oatmeal
1 egg, slightly beaten
1/4 cup diced onion
salt and pepper to taste

Heat oven to 350 degrees. In a medium bowl, mix all ingredients together thoroughly. Place in a 8 X 4 in. loaf pan. Bake approx. 1 hour or until meat is browned and juices are clear. Drain and serve after it sets for approx. 5 minutes.
 

 

 

Meatloaf with Oatmeal Variations

  Customize your meatloaf with your favourite ingredients. Add one of the following ingredients to the recipe above for a delicious variation:

 
  1/2 cup corn (frozen or canned)
1/2 cup chopped pepper, red or green
1 small can chopped mushrooms, drained
1/3 cup grated Parmesan cheese
2 tbsp. finely chopped parsley or cilantro


 

 

Meatloaf with Oatmeal

  1 lb. ground beef
1 cup cottage cheese
1/2 cup rolled oats, quick cooking
1 egg
1/4 cup ketchup
2 tsp. prepared mustard
2 tbsp. onion, chopped
1 tbsp. celery, chopped
1 tbsp. fresh parsley, chopped
Salt and pepper to taste
1/8 tsp. thyme
1/3 cup grated Parmesan cheese

Preheat oven to 350 degrees F. Combine all ingredients together in a large bowl, except for Parmesan cheese. Pat meat mixture into a square pan and bake for 20 min. Sprinkle Parmesan cheese evenly over the meatloaf and bake another 10 minutes. Let sit for 5-10 minutes before serving.
