Key Lime Cheesecake Bars

A delicious combination of tart and tangy, but also very light and creamy. They won't last long!

Key Lime Cheesecake Bars Recipe

  Crust:
3/4 cup all-purpose flour
1/4 cup brown sugar, packed
1/4 cup ground almonds
1/4 cup butter
Filling:
1 pkg cream cheese, softened
1/2 cup sugar
1 egg
4 tsp. lime juice
2 tsp. grated lime rind

Crust:
Combine flour, sugar and almonds in a mixing bowl. Cut in butter until mixture is crumbly. Press into a square cake pan. Bake at 350 degrees F for 15 minutes.

Filling:
Beat all ingredients together in a bowl with an electric mixer, until smooth and creamy. Spread over the baked crust and bake at 350 degrees F for about 12 minutes, or until set. Cool and chill before cutting into bars. Top with small lime pieces or candies for a garnish.
 

 

 

Key Lime Cheesecake Bars 2

  3/4 cup graham cracker crumbs
1/2 cup sliced almonds
sprinkle cinnamon
3 tbsp. butter, melted
1 can (14oz.) sweetened condensed milk
1 pkg. cream cheese, softened
2 egg yolks
9 tbsp. lime juice
Topping:
1/4 sliced almonds
1 tsp icing sugar

Preheat oven to 350 degrees F. Line a square cake pan with parchment paper. Blend the cracker crumbs, sliced almonds and cinnamon in a food processor until finely ground. Add the butter and blend together. Press the mixture into the prepared square pan.

Blend the condensed milk, cream cheese, egg yolks, and lime juice until smooth. Pour over the crust. Sprinkle mixed topping ingredients over top if desired. Bake for 20 minutes or until the filling is set. Chill overnight.
