Turkey Soup Recipe

  10 cups turkey stock (substitute chicken stock, if needed)
1/2 tsp. basil
1/2 tsp. savory
1/4 tsp. ginger
1 clove minced garlic
1/2 tsp. lemon pepper
1/2 cup uncooked long grain rice
1 cup diced carrots
1 cup diced potatoes
1 yellow onion, diced
1 cup celery, diced
1/2 cup corn
1/2 cup sliced green beans
2 cups chopped, cooked turkey

Bring the soup stock to a boil in a large pot. Add the spices and uncooked rice and cook for 10 minutes. Add the vegetables and cook for 15 more minutes. Stir in the turkey and heat until all ingredients are cooked through. Serve hot.

 

 

Turkey Vegetable Soup

  2 1/2 cups diced, cooked turkey
3 cups chicken broth
2 cups cabbage, sliced thinly
1 1/2 cups diced potatoes
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped onion
1/4 tsp. basil
1/4 tsp. oregano
1/4 tsp. garlic powder
1/4 tsp. black pepper
1 can tomatoes

Put the turkey and vegetables in a large pot. Sprinkle with spices. Add the can of tomatoes and break the tomatoes into smaller pieces. Add the broth and stir well to combine. Cover and cook on high until soup starts to boil, then reduce heat to low and simmer for 20 minutes or until potatoes are cooked.
