Creamy Potato Soup Recipe
4 cups diced potatoes
1 large onion, diced
1/2 cup chopped celery, including leaves
1 1/2 cups diced carrots
1 garlic clove, minced
3 tbsp butter
2 cups chicken broth
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. tarragon
2 cups milk
1/2 cup grated Cheddar cheese
Directions:
Stir together in large pot: butter, onion, celery, carrot and garlic.
Add potatoes, broth and spices. Cover and simmer until potatoes are
tender, about 20 minutes. Add milk and reheat without boiling. Top each
serving bowl with shredded cheese.
