Christmas Carrot Pudding Recipe

Rich old fashioned Christmas pudding is a special treat!  It is traditionally served on Christmas Day.

Christmas Carrot Pudding Recipe

  1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar, packed
1 tsp. baking soda
1 tsp cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. salt
1 cup dry bread crumbs
1/2 cup vegetable oil
1 cup grated carrot
1 cup grated apple
1 cup grated potato
1 cup raisins
1 cup chopped walnuts

Sauce:
1/2 cup brown sugar, packed
2 tbsp. cornstarch
1 3/4 cups water
2 tbsp. butter
1 tsp. vanilla

Combine the first nine ingredients in a large bowl, then add oil. Add carrots, apples, potatoes, raisins, nuts and mix well.

To steam the pudding, use two 13 oz. coffee cans, greased. Place the pudding mixture into both cans evenly and cover with tin foil, securing tightly with string or an elastic band. Place the cans inside of a large pot and add boiling water to 2 in. high. Cover and simmer for approx. 3 hours or until cake tests done. Cool, covered for half an hour, then carefully unmold the pudding.

Sauce:
Mix together brown sugar and cornstarch in saucepan, gradually stirring in the water. Add the butter and vanilla and bring sauce to a boil over medium heat, stirring constantly. Boil for 2 minutes. Serve sauce over warm pudding.
 

 

 

Old Fashioned Christmas Pudding - Carrot Pudding

  1 cup shredded carrots
1 cup grated potatoes
1 1/4 cups flour
1 cup brown sugar
1 cup raisins
1 cup dates
1 cup currants
1 cup butter
1 tsp. baking soda
salt

Combine all ingredients in a large pyrex bowl. Cover will foil and steam for three hours. Put a couple of inches of water in a large pot, place a small inverted pyrex bowl on top and the pyrex bowl with the pudding on top of the small inverted bowl. Cover the pot and cook on medium heat, check water level periodically and add as needed.
