1 large onion

<p>3 boneless, skinned chicken breasts<br />
1/4 tsp pepper<br />
3 tbsp oil<br />
1 head broccoli steamed<br />
4 cups cooked white rice<br />
2 &#8211; 10 oz cans cream of chicken soup<br />
1 cup mayonnaise<br />
2 tsp curry powder<br />

<p>Cut chicken into 2 x 4 inch pieces and sprinkle with pepper.  Saute slowly in oil over medium heat until white and opaque, about 6 minutes.  Drain.  Arrange cooked rice on bottom of buttered casserole and arrange cooked broccoli and chicken pieces.</p>
<p>Mix soup, mayonnaise, curry and lemon juice together and pour over chicken.  Sprinkle with Cheddar cheese and bake, uncovered at 375 degrees for 30- 35 minutes.  Serve with a salad.  Serves four to six people.</p>

<p>Make sauce by combining in same skillet, cream, chicken browth, wine, salt and pepper.  Bring to boil, pour over chicken.  Bake 30 &#8211; 45 minutes in 400 degree oven.</p>
