Description

Beet Apple Muffins:

Makes 6 to 8 muffins.

3/4 cup all purpose flour
1/4 cup sugar
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/4 teaspoon salt
1/4 cup vegetable oil
1 egg (beaten)
1 medium beet (1/2 cup) grated
1/4 cup apple sauce
1/2 teaspoon vanilla

Combine flour, sugar, baking powder, baking soda, cinnamon, salt together and set aside.  In another bowl combine oil, egg, beet, apple sauce and vanilla.  Add these moist ingredients to the dry ingredients and quickly stir until well mixed together.  Spoon the batter into muffin tins.  Bake at 350 for 20 to 25 minutes.
