Description

Peanut Butter and Jam Cookies don’t have to be baked in the oven.  These are delicious cookies with a nice crunchy texture and a chocolate and peanut butter for a scrumptious topping.

Peanut Butter and Jam Cookies

3 cups miniature marshmallows
1 cup crunchy peanut butter
½ cup butter
4 ½ cups rice crispy cereal

Filling

¾ cup strawberry, raspberry, peach jam

Topping

½ cup  chocolate chips
1 tablespoon crunchy peanut butter
2 teaspoons lard

Directions

In a saucepan melt the marshmallows with 1 cup of peanut butter and ½ cup of butter.  Add the rice crispies cereal to the melted mixture and blend.  This can be pressed into a 11×7 inch pan. Spread jam over the panned mixture.

In a pan melt the chocolate chips, 1 tablespoon peanut butter and lard.  Spread this mixture over the jam layer.  Put the pan in the fridge for about 2 hours and then cut into squares.   Impress guests with this awesome Peanut Butter and Jam square cookie.
