Chicken Casserole
Description
Chicken Broccoli Casserole:
3 boneless, skinned chicken breasts
1/4 tsp pepper
3 tbsp oil
1 head broccoli steamed
4 cups cooked white rice
2 – 10 oz cans cream of chicken soup
1 cup mayonnaise
2 tsp curry powder
2 tsp lemon juice
1 1/2 cups grated Cheddar cheese
Cut chicken into 2 x 4 inch pieces and sprinkle with pepper. Saute slowly in oil over medium heat until white and opaque, about 6 minutes. Drain. Arrange cooked rice on bottom of buttered casserole and arrange cooked broccoli and chicken pieces.
Mix soup, mayonnaise, curry and lemon juice together and pour over chicken. Sprinkle with Cheddar cheese and bake, uncovered at 375 degrees for 30- 35 minutes. Serve with a salad. Serves four to six people.
