Raspberry Pie Recipe
Baked pie shell
6 cup fresh raspberries
3/4 cup sugar
1 tbsp cornstarch
1/2 cup water
1/2 cup cream cheese
Measure 1 cup of mashed raspberries. Stir together sugar
and cornstarch in a pan and add water and mashed berries.
Stir and let thicken at a boil. Once the mixture thickens
let it cool down.
Mix cream cheese with and additional 2 tablespoons of sugar.
Spread this mixture on the bottom of the pie shell and
fill with the remainder of the fresh berries. Then add the
cooked berries on top. Put the pie in the fridge for
several hours. This pie can be served with whipped cream.
