Pecan Chocolates

Yummy pecan chocolates make a special treat. Make these for Christmas or any time of the year!

Pecan Chocolates

2 cups brown sugar, packed
1 cup butter or margarine
1 cup light corn syrup
1/8 tsp. salt
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla extract
1 lbs. whole pecans
1 cup semisweet chocolate chips
1 cup milk chocolate chips
2 tblsp. shortening

Directions:

Mix the brown sugar, butter, corn syrup and salt together in a large saucepan. Stir over medium heat until sugar is dissolved. Add the milk slowly and blend well. Cook until mixture reaches the firm-ball stage (248). Remove the saucepan from heat, and add the vanilla until combined. Line a cookie sheet with wax paper. Fold the pecans into the mixture and drop by spoonfuls onto the wax paper. Chill until firm. Melt chocolate chips and shortening in the microwave or in a double boiler. Drizzle the chocolate mixture over each cluster. Chill the chocolates until firm.
