Macaroni and Cheese

1 cup macaroni
1 tsp. salt
1 tbsp. butter or margarine
1 tbsp. flour
tsp. salt
dash pepper
1 cup milk
cup grated cheese
cup buttered crumbs

Boil the macaroni with salt in about 2 quarts of water; drain. Melt margarine, blend in flour, salt and pepper. Add milk and stir over low heat until thick. Add grated cheese, and stir until melted. Add macaroni to the sauce, place into a greased casserole, cover with buttered crumbs and bake at 400 until brown.

Baked Macaroni and Cheese

2 cups macaroni
cup chopped onion
2 tbsp. butter or margarine
2 tbsp. flour
1 tsp. salt
2 cups milk
1 1/3 cups grated parmesan cheese
1 jar spaghetti sauce (28 oz.)
cup fine dry bread crumbs
2 tbsp. melted butter or margarine

Cook macaroni according to directions; drain. Saute onion in 2 tbsp. butter until tender. Stir in flour and salt; cook for one minute. Add in milk, stirring constantly until thickened. Stir in macaroni and cheese.

Spoon half of the jar of spaghetti sauce into a 2 quart baking dish. Top with half of the macaroni mixture. Repeat layering. Combine bread crumbs and melted butter. Sprinkle over casserole. Bake, uncovered at 350 for 20 to 25 minutes.

Macaroni and Cheese Stuffed Peppers

6 medium green peppers
1 cup macaroni
1 cup sliced celery
cup chopped onion
2 tbsp. butter or margarine
1 10 oz. can cream of mushroom soup
2 cups shredded cheddar cheese
1 28 oz. can spaghetti sauce

Cut the tops from green peppers and scoop out the seeds. Parboil for five minutes; drain. Meanwhile, cook macaroni according to package directions; drain.

Saute celery and onion in butter in large frying pan until tender. Add soup and cheese to celery and onion. Cook and stir until cheese melts. Stir in macaroni.

Fill peppers with macaroni mixture. Place the peppers in a 9 in. X 13 in. baking dish. Pour spaghetti sauce around peppers and cover with foil. Bake at 350 for 15 to 20 minutes. Uncover and bake 10 more minutes.

Easy Macaroni and Cheese

3 cups boiling water
tsp. vinegar
1 tsp. olive oil
2 cups macaroni
cup grated cheese, any variety
1 cups hot tomato sauce
Salt and pepper

Put water, vinegar, oil and salt in microwave safe casserole dish. Add macaroni and stir well. Microwave on high, uncovered for seven minutes. Stir frequently to avoid sticking.

Cover casserole and let stand for 8 to 10 minutes before draining.

After draining and rinsing macaroni, put back into casserole dish and add remaining ingredients. Microwave on medium-high for three minutes uncovered.

Meaty Macaroni and Cheese Recipe

2 tbsp. olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
tsp. oregano
1 tbsp. chopped parsley
1 lb. ground beef
1 28 oz. cans tomatoes, drained and chopped
2 cups cooked macaroni
1 cups ricotta cheese
Salt and pepper

Heat oil in a large pan. Add onion and cook 3 minutes over low heat. Stir in garlic, seasonings and ground beef. Cook 5 – 6 minutes, stirring often.

Add in tomatoes and continue cooking 10 to 12 minutes over low heat.

Stir in macaroni and cheese; cook about 5 minutes over low heat until done.
